Thank you so much for the great work on your part. I am sure they will be a hit at the class reunion. The one question I would like to know. Should the chocolate be placed in the refrigerator until September?

Thank you for your question on storing chocolate. Ideally, chocolate should be stored in a slightly cool and dry place. The perfect environment would be 55-70 degrees Fahrenheit, have low humidity (less than 50 percent), be out of direct sunlight, away from any other foods or substances with strong odors that could be absorbed by the chocolate. While refrigerated chocolate is certainly safe, we don't recommend it. Chocolate kept in the refrigerator may "sweat" when brought to room temperature. Frequent exposure to high temperatures can cause the cocoa butter in chocolate to rise to the surface, creating bloom, an unpleasant cloudy gray color. This just means that the cocoa butter has separated. While it doesn't look pretty, the chocolate is still perfectly fine.
